Kaiten-zushi means conveyored sushi, meaning the sushi is searved to customers on a rotating conveyor belt. Kaiten-zushi is more convenient than a regular sushi restaurant because of the lower pressure on both customers (to place sushi orders) and the sushi chef (to make the sushi quickly). Although the quality of food is considered to be lower at kaiten-zushi, recently due to its popularity such restaurants have seen a jump in service and quality.
